If you have the time, here's a movie-sized interview with WandaVision director Matt Shakman:
How does embedding work??
He starts talking about WandaVision at 45:25. Lots of interesting stuff, but let me specifically mention them talking about theories getting out of hand and not addressing it (at 1:06:15). I guess it makes sense, because once you start refuting ideas, it'll get very suspicious when you don't. Alternatively you lie and people stop trusting anything you say.
1:10:32: Once upon a time there had been a 10th episode planned! I still think they should have done one, to give a proper ending to the stories of the smaller characters. And the pandemic messed with the finale. AHA! That explains how some things were set up, but didn't get a payoff.
2:04:50: There was a SeƱor Scratchy scene with several of the smaller characters shot, but didn't make it into the episode because it would have taken the focus off Wanda and Vision. It's good to know that they had at least planned more things for these characters.
